π SPANISH SAFFRON BEEF STEW RECIPE - CARNE CON PATATAS

- π§ 3 cloves of garlic

1 brown onion
- πΆοΈ 1 red pepper

1 tomato
- π₯© 600g diced beef
- π₯£ 500ml beef stock
- π· 1 glass of white wine
- π₯ 4 large potatoes (diced)
- πΏ 1 bay leaf
- πΌ A pinch of saffron
- π§ Water (enough to cover ingredients in slow cooker)
- π₯ White baguette (to serve)

π©βπ³ Instructions
- Fry the garlic, onion, red pepper, and tomato in olive oil until tender.
- Add the diced beef and brown it on all sides.
- Pour in the beef stock and white wine, stirring to combine.
- Transfer everything to a slow cooker (or pressure cooker). Add water, potatoes, bay leaf, and saffron.
- If using an olla exprΓ©s (pressure cooker), cook for about 35β40 minutes.
- If using a slow cooker, cook for 4 hours on maximum.
- Check that the potatoes are tender and the sauce has thickened.
- Serve hot with slices of white baguette to soak up the rich sauce.

- Sofrito + browning: 10β15 minutes
- Gentle simmer (covered): 60β90 minutes
- Final thickening (uncovered): 10β15 minutes
Total cooking time: approximately 1Β½β2 hours
Tips
- Cook low and slow; avoid rapid boiling to keep the beef tender.
- Stir occasionally and add a little hot water or stock if it dries out.
- Add potatoes after about 30 minutes if diced small, to prevent them breaking down.
