🥘 How to Cook Authentic Spanish Paella for Two
🧂 Ingredients
- Olive oil
- Green pepper
- Garlic
- Saffron (or coloring powder as a substitute)
- Prawns
- Clams
- Mussels
- Rice
- 2 ripe tomatoes
Optional: Some people add onion, but according to my mum, it can make the rice too soft! Others include chicken or extra vegetables — feel free to experiment.
👩🍳 Instructions
- Rinse the mussels, prawns, and clams thoroughly.
- Chop the tomatoes, green pepper, and garlic into small pieces. Add a pinch of salt.
- Heat olive oil in a wide pan and sauté the chopped ingredients until tender.
- Smash the tomatoes gently in the pan to release their juices.
- Once softened, add the rice and stir well.
- Mix in saffron or coloring powder for that golden hue.
- Add a splash of water if needed to help the rice cook evenly.
- Add the mussels and let them steam open.
- Add the prawns and cook until pink and firm.
- Simmer for about 20 minutes until the liquid is mostly absorbed and the rice is cooked.
Voilà! Your homemade paella is ready to enjoy.
