🥘 How to Cook Authentic Spanish Paella for Two

🧂 Ingredients

  • Olive oil
  • Green pepper
  • Garlic
  • Saffron (or coloring powder as a substitute)
  • Prawns
  • Clams
  • Mussels
  • Rice
  • 2 ripe tomatoes

Optional: Some people add onion, but according to my mum, it can make the rice too soft! Others include chicken or extra vegetables — feel free to experiment.

👩‍🍳 Instructions

  1. Rinse the mussels, prawns, and clams thoroughly.
  2. Chop the tomatoes, green pepper, and garlic into small pieces. Add a pinch of salt.
  3. Heat olive oil in a wide pan and sauté the chopped ingredients until tender.
  4. Smash the tomatoes gently in the pan to release their juices.
  5. Once softened, add the rice and stir well.
  6. Mix in saffron or coloring powder for that golden hue.
  7. Add a splash of water if needed to help the rice cook evenly.
  8. Add the mussels and let them steam open.
  9. Add the prawns and cook until pink and firm.
  10. Simmer for about 20 minutes until the liquid is mostly absorbed and the rice is cooked.

Voilà! Your homemade paella is ready to enjoy.
