How to cook a real Spanish omelette for 1
Ingredients:
Olive oil (enough to cover the potatoes to fry)
2 Big potatoes (suitable for frying)
2 Eggs
Some people likes to add some onion, or chorizo sausage, peppers, etc, but I like it best on its own.
Cut the potatoes in small pieces.
Add salt to them.
Fry them in a pan with olive oil.
Once they are tender, drain the oil.
Add a bit of salt, and whip the eggs.
Put the fried potatoes onto the whipped egg.
Put a tiny bit of olive oil onto the pan.
Pull the mixture.
Do not leave it too long or it will overcook it.
Turn it around with a lid, if you don’t have one, get a plate big enough so the omelette will not fall down.
Again do not leave it too long to avoid overcooking it.
Voila!
