  • Olive oil (enough to cover the potatoes for frying)
  • πŸ₯” 2 large potatoes (suitable for frying)
  • πŸ₯š 2 eggs

Optional: Some people like to add onion, chorizo, or peppers β€” but I prefer it simple and classic!

  1. Peel and cut the potatoes into small pieces.
  2. Add a pinch of salt.
  3. Fry the potatoes in olive oil until tender.
  4. Drain the oil and set the potatoes aside.
  5. Whip the eggs with a little salt.
  6. Mix the fried potatoes into the whipped eggs.
  7. Add a small amount of olive oil to the pan and pour in the mixture.
  8. Cook gently β€” don’t leave it too long or it will overcook.
  9. Flip the omelette using a lid or a large plate to avoid spills.
  10. Cook the other side briefly, just until set.
